Celebrity's New Change in Cuisine
Celebrity has already dribbled out info over the past few months about onboard features of the upcoming Celebrity Solstice: larger staterooms, glass blowing, nightlife elements, the Lawn Club. But they've saved the most important feature for last: a change in cuisine.
Gourmet dining has long been a hallmark of Celebrity. Celebrity was among the first to announce a celebrity chef--Michel Roux in 1995. But Roux is gone from Celebrity, and it's perhaps time for something new. In Roux' place at Celebrity now is Blau & Associates, which, while not exactly a household name, helped transform Las Vegas dining from cheap buffets to some of the trendiest restaurants in the world. Elizabeth Blau was most notably involved with Bellagio, MGM/Mirage, and, more recently, the Wynn Las Vegas. These hotels sport some of the coolest dining establishments in Vegas, and it's not just the food, it's the ambiance, too. When we dined at the Wynn in Vegas this September, we noticed the crowd was very boomerish--not coincidentally, the target market for the Solstice series ships.
Ten Restaurants For Solstice
Even the restaurant in Manhattan where Celebrity made the announcement this week about Solstice cuisine was symbolic--Per Se is not only noted for its cuisine and presentation but for its mood and surroundings. Adam Tihany, who created Per Se, as well as Le Cirque in New York and Seablue in Las Vegas, will be designing several of Solstice's 10 dining venues: the two-level Grand Epernay dining room, Tuscan Grille, and the casual Oceanview Café and Grill on the
ship's lido deck. All promise unique features--the Grand Epernay, for example, will feature a two-story glass wine tower.
Along with Blau & Associates, Celebrity VP of Food & Beverage Jacques Van Staden is seeing to the menus of the different venues. And they will be very diverse. The Tuscan Grille steakhouse will have guests enter "through an archway reminiscent of a Napa Valley wine cellar." Silk Harvest for Asian cuisine includes "cocktails created with ginger root and acai berries."
Late night dining is being redefined on Solstice with Bistro on Five, which will feature a variety of specialty crepes, complemented with sandwiches, soups, quiche, fish & chips, and chicken pot pie nearly around the clock.
There will be a coffeehouse (Cafe al Bacio & Gelateria), and, as announced earlier, Blu will feature "clean cuisine." Plus, in a nod to continuity, there's Murano; Celebrity Century boasts a restaurant of the same name, and judging from descriptions of entrees like spice-roasted duck with raisin-apple compote, Solstice's Murano will be similar to Century's.
Plus, there are an unusual number of casual options, with AquaSpa Café next to the Solarium, Mast Grill & Bar next to the pool, and, most interestingly, the Oceanview Café and Grill, which will be Tihany-designed and have menus that "change to reflect the regions in which the ship is sailing." Open for breakfast, lunch, and dinner, Celebrity says the venue offers plenty of outdoor seating for soaking up the sun as well as inside dining.

| Celebrity Cruises offers glass-blowing

Live glass-blowing will be one feature on the Celebrity Solstice, due out in December 2008. In partnership with the Corning Museum of Glass, the "Hot Glass Show" will take place at the aft of the ship's upper deck. The show "will present the history and craft of glassblowing, from its ancient origins to its current countless uses. Three gaffers (the artisans who blow glass) will educate and entertain cruisers with live glassmaking shows, lectures and workshops." For more information, visit CruiseCelebritySolstice.com.

Celebrity Cruises will present a stellar line-up of nightclubs and lounges on the line's new Celebrity Solstice, scheduled to launch in December, 2008. | Construction begins on Celebrity Equinox

Celebrity Cruises says construction has begun at the Meyer Werft shipyard in Papenburg, Germany, on its next new ship, the 122,000-ton, 2,850-passenger Celebrity Equinox, which is slated to enter service in 2009. The Equinox is the second of four ships in Celebrity's Solstice class. The first, the Celebrity Solstice, is under construction and scheduled for delivery in fall 2008.

| Celebrity Announces Expansion in Europe Celebrity Cruises says its 2007-08 European program will include its broadest array of destinations since the line began sailing there in 1999. Bookings opened Wednesday for the 2007-08 European season on Century, Constellation, Galaxy and Millennium.
The Constellation will operate 14-night Scandinavia and Russia cruises roundtrip from Dover, England. The Galaxy is scheduled for a series of 10- and 11-night Eastern Mediterranean cruises-each visiting Greece, Turkey and Italy -- roundtrip from Civitavecchia. It also will offer two 14-night Mediterranean and Black Sea cruises featuring calls on Constanta, Romania, and Odessa, Ukraine, along with Celebrity's first cruise through the Bosporus Strait. The Millennium will operate 12-night sailings from Barcelona and Venice from May 13 through November 18, 2007. The Century will launch its 2007 Northern Europe season with eight-night Norwegian Fjords cruises roundtrip from Amsterdam (Rotterdam) departing May 9, May 26 and Aug. 26.
Celebrity's first Scotland and Ireland cruise sets sail roundtrip from Amsterdam on May 17, with a nine-night itinerary to Edinburgh, Inverness/Loch Ness and Kirkwall, Scotland. A series of 12-night Scandinavia and Russia itineraries follow.
